Opening day was nuts.
We had no idea that we were going to be inundated by Sushi lovers so quickly.
Lunchtime lines were three deep and the Juice bar went off as well.
Broome is nothing like the normal Franchises we have seen in the metro areas and we were a bit nervous about how the locals would react to our concept.
Needn’t have worried too much as a good food offering around us is pretty poor. The fresh Sushi/Juice combination has taken the town by storm and with some good marketing, great product and plenty of good luck, we will continue along the same opening path.
Despite a lot of things going awry with equipment and shop fit [no display fridge for our first week and selling out of a tiny borrowed bain maree] we managed to roll and sell about 2500 rolls in our first week.
We have been extremely fortunate to have had the back up of Felicity and Nat who were excellent, and whilst they spent more time serving customers than training staff, we couldn’t have asked for more help to get started.
So where are we at now?
Staffing is double what we expected. Training is coming along nicely and all of the team are working on their weaknesses. We are rolling between 300 and 500 roll a day with sell outs most days. Loyalty rewards are already being taken advantage of and we see lots of ‘regulars’ every day.
Great concept and we think the excitement will continue.
